Cole & Nancy Sonafrank's Recipe for Real Spaghetti
- Peeled & diced tomatoes - canned work best
- Tomato sauce - a whole bunch
- Tomato paste - just a little
- Chopped broccoli - more than you might think
- Black Olives - whole, diced & minced
- Chopped Green olives - just a few
- Mushrooms - small canned or chopped & sautéed fresh
- Blended carrots - they’re good for you & magic
- Small onion - sautéed with meat & a bit of oregano
- Hot & spicy Italian sausage - at least a little browned & drained
- Extra lean ground beef - browned - I suppose it's optional
- Red wine - cheap but theoretically drinkable, bad stuff will ruin it
- Minced fresh garlic - what the whole sauce revolves around
- A smidgen of honey - it's a secret
- Corn starch - mixed with cold water & added late
- Oregano - lots
- Basil - lots
- Marjoram - less - or thyme, but only one other spice
- A couple whole or halved bay leaves - take them out later
- Parsley - tiny sprigs are best
- Salt - you'll notice if you don't use at least some
- Lots of simmering time - at least 12 hours
- Let most of it sit overnight in the fridge - patience is a virtue
- The will to substitute - make do with what you have
